Papera
Mark
Papera began his culinary career at an early age in New Jersey, by
beginning an apprenticeship at a premiere country club, under
the guidance of William Decker, CEC. After working at various
hotels and restaurants in the NJ area, Mark was accepted to the Hotel
School of Administration at Cornell University.
Upon
graduation, Mark moved to New York City and worked at numerous
Manhattan restaurants, including: LeCirque,
Osteria
del Circo,
Beacon,
Café
Milou
and Le
Bateua Ivre.
Continuing on his career path, Mark then accepted the position of
Sous Chef at the reopening of the world famous Windows
on the World
with Micheal Lomonoco. Mark followed that up by becoming the
Chef de Cuisine for Marc Murphy and opened La
Fourchette
on NYC’s Upper East Side.
Marks
next endeavor was an Executive Chef position for Merchants
NY.
After a year of performance he was awarded the position of corporate
chef and given responsibility for the operations of four locations.
Mark
then moved to Montclair, NJ where he realized his lifelong dream of
opening his own restaurant. His restaurant, Epernay,
received excellent reviews and was one of the most popular
restaurants in NJ according to ZAGAT. After several successful
years Mark sold the business and relocated to Ithaca NY.
In
Ithaca, Mark opened the French Bistro,
Dijon,
in November 2006 which he operated until it was sold in December
2009.
Mark
now brings his culinary talents to The
Bistro at Thirsty Owl Wine Company,
where he looks forward to preparing and serving exceptional food
while growing with one of the best wineries in the Finger Lakes
region.
